Default Hadith narrators

Assalam o alaikum

While reading hadiths I also see long names of narrators . Is there any limited amount of people whos hadiths are considered as Shahih ? and what link did the hadith narrators had with the Prophet ? I.e. How can we take them to be truthful and honest.

I need to know this for my knowledge and which inshallah will give us better insight when speaking to member of other faith and a good understanding of our religion
